This distinctive way of preparing goose meat has its history...
In the old days, housewives used to stockpile goose meat in jars due to the seasonal availability of this meat and the impossibility of storing it.
Thus the recipe for goose meat and pâté in a jar has been passed down from generation to generation, and today these dishes are prepared by the Farmer's Wives' Association in Ćwiklice
These are the flagship products of the St Martin's parish fair in Ćwiklice.
The most delicious part of the goose carcass, i.e. the leg and breast, are seasoned and baked in jars. When prepared in this way, the meat does not lose its juiciness and is soft and tender. They can be eaten cold as well as a dinner dish.
The remaining meat from the goose carcasses is mixed with others, ground, seasoned and then baked in jars. This is how goose pâté in a jar is made.
The goose used is of the best quality, coming from local producers who specialise in raising geese.
